We are looking at a cruise on the Sapphire Princess for Jan 2006, that stops in Mazatlan. Hopefully you are still around the board a year from now, so I can get some helpful hints.

Are you a tour operator? I am taking Carnival Pride in June of 05 for my honeymoon and we are already thinking of things to do off the boat in each place.
