Jenn, it has almost the same texture and taste of potatoes, but has to be seasoned well or else it has a rather bland taste. The seeds are also good after boiling in salted water.

This one was taken at Costa Maya in Dec 2004. Our ship the Carnival Glory docked along with a RCCL and Disney ships. Sorry, I can't remember their names.
