Accommodating celiac disease onboard NCL Jewel

I have a family member who is going on her first cruise ever. While she is very excited, she is wondering what provisions would allow her to enjoy the cruise to its fullest considering she needs to eat gluten free foods.

I think she realises that there won't be gluten free breads, cakes, pastries, etc. on board but even if she has access to a toaster and microwave oven she would want to break her gluten free bread, muffins, etc. on board.

Any comments that I can pass on to her about her concerns?
